ROSSO restaurant at Four Seasons Hotel Riyadh takes food lovers on a culinary dinner adventure, with succulent authentic Italian delicacies and mouth-watering dishes to stimulate their taste buds, prepared by Italian Chef Marco Terranova with an enticing menu that reflects the culinary traditions of his native country.
When asked how his Italian roots have influence his cooking, Terranova said: “I was born and raised in Augusta in east Sicily with the taste, love, and traditions of pure Italian food. Sicily’s famous history gave additional meaning to my cooking passion and forged my culinary characteristics with unique flavors, aromas, and colors. The culinary school I attended and work experience I have gathered so far have strengthened my foundations and amplified the concept of authentic Italian cuisine in me.”
His specialties include classic pasta dishes such as homemade lasagna bolognese and spaghetti ai frutti di mare, as well as traditional main courses that include Fillet of Cod pan-seared with lemon, capers, olives and pine nuts sauce, Veal parcel filled with buffalo mozzarella, cherry tomatoes, black olives, and basil. Spinach ricotta tortelli with mushroom sauce and mix grilled seafood.
Terranova’s career path has taken him to many countries worldwide which introduced him to new styles and culinary traditions. “Each experience has enriched my cultural background and Riyadh has an inspiring multicultural society, which helps me be more creative in my dishes, in addition to the people that are very friendly and open minded to the taste of Italian cuisine” says Terranova.
On Wednesdays and Thursdays, ROSSO offers a superb Festa Italiana buffet consisting of appetizers, main courses and desserts with authentic dishes from all regions of Italy including freshly prepared bread and pizza from the open kitchen’s wood-burning oven.
